I adore Barbu. It’s certainly my favorite restaurant in Den Bosch. The sleek, elegant, minimalist interior, a mix of neutral colors, sets the tone and ambiance for a beautiful meal crafted by the highly creative, super talented, and very welcoming chef Martijn. I love the care, consideration, and attention to detail he puts into each dish and the design of his menu. I love the hyperseasonality of the plates and the fact that I am always surprised by the beauty, deliciousness, and creativity of each dish. The colors, flavors and textures pop every time and there is a refinement and elegance that comes with restraint and skill. I was especially impressed by Barbu’s asparagus menu in spring, which, out of all of the asparagus menus I have ever had the pleasure of enjoying, was by far the best! The crab salad with asparagus, rhubarb and miso starter and the vanilla parfait with asparagus, strawberries, and caramel were so special and nothing short of genius! I think about these pretty, delicious, and sophisticated dishes more often. Sitting in the garden along the binnendieze in warm weather is a special delight. Barbu has THE best terrace and one of the best wine lists in Den Bosch. Another amazing thing about Barbu is the desserts. Rarely do I order sweet desserts at a restaurant because I don’t possess a sweet tooth, but I absolutely love all of them at Barbu, mainly because of the use of seasonal ingredients and the pure flavors over artificial sweetness. Aside from the previously mentioned asparagus and strawberry parfait dessert, which I so loved, other highlights included a quince tarte tatin, peaches Melba with strawberry ice cream and variations of raspberries, and bread pudding with caramelised bananas. The mainstay cheese plate - “the four cheeses” - is also highly recommended. Another mainstay I adore is the anchovy butter which is served with a bread order. Anchovy butter is just … well, chef’s kiss! You can see and taste the passion Martijn has for his restaurant and his work in everything from the decor to the minute details in his cooking. We also really like when Anouk is working because she’s a very warm, friendly, informative, and professional server! Barbu is truly a treasure in a unique location, one of the most historic buildings in Den Bosch, which is a perfect place to house such a special restaurant that really leaves its mark.

Being regular visitors to Den Bosch has given plenty of opportunities to explore the restaurant scene. Barbu is a more recent discovery and never fails to impress. The open kitchen gives a ringside view of the accomplished chefs. What they produce is inventive and uses the best ingredients. Today's sukade (beef brisket) was exquisite. Crisp on the outside and succulent within. With an attractive interior, great wine list, and canalside courtyard for outdoors dining, there is much to enjoy and to tempt you back.

We chose Barbu regarding the reviews; We were 4 people and we have been so disappointed : bisque de homard was watery, steak the meat was hard also it has been requested rare ( the waitress didn’t ask the cooking of the meat, I had to ask for it ) and we received a bowl of French fries dry, without any taste and the salad without any seasoning. And we have been waiting 30’ to receive the 3 starters bisque de homard and 45’ between starters and main dishes . Therefore I won’t invite you to go to Barbu , much better to choose another restaurant to enjoy your diner .
